You’ll find the gleams of sapphire,

Twenty minutes out of town, we turn into a long poplar-lined
driveway that’s the entrance to Godolphin, an historic grazing
property that farms prime lambs and cattle. Following the instructions
emailed to us by our host Christine Williams, we drive past the stables
and stop at the Georgian-style dairy. This small building is to be our
home for the night. It’s modern on the inside, historic on the outside
and Christine has cleverly designed and decorated it in a mix of retro
country style and 2018 comfort. It’s gorgeous and brings to mind
happy childhood holidays with my grandparents in the days when we
played cards rather than computer games.
The nearby stable is also Georgian and can sleep up to 10 people.
Like the dairy, it features an eclectic mix of memorabilia, revealing the
life and times of previous generations. The walls of both buildings are
about 30cm thick and through the windows you can see the sheep
grazing on the hills nearby.
We take a walk up the hill behind the dairy cottage to visit a small
graveyard. Standing by the graves of the first generation to settle
here, we feel an appreciation of the family connection to Godolphin.
It has been in the same family’s hands since 1852, or six generations
– an impressive feat when so many family farms today are being
gobbled up by national and multi-national companies.
On our drive back to Sydney, we realise we made a miscalculation –
four days were definitely not enough to do this beautiful region
justice. We still had galleries and museums to visit, more wines and
honey to taste, more historic buildings to study and national parks to
explore. This is why we’re already planning our next road trip, and why
you should pack up your own car and head west over the mountains.
It’s worth the drive.
To celebrate the royal visit of Harry and Meghan, Farmer
Brown’s Pastured Eggs (see page 27) baked a Victoria
sponge cake. (Double the recipe for the pictured cake.)
LEMON VICTORIA SPONGE
WITH LEMON CURD, BUTTER CREAM &
170g caster sugar
Grated zest of 1 lemon
3 large eggs
170g self-raising flour
1. Preheat the oven to 190°C.
2. Prepare 2x20cm sandwich tins lined with
3. Cream the butter and when soft add the sugar
and beat until light and fluffy.
4. Add the lemon zest.
5. Beat in one egg at a time, each time with one
teaspoon of the flour.
6. Beat very well and fold in the remaining flour.
7. Add a little water to bring the mixture to a

and smooth the tops with a spatula. Bake in the
middle of the preheated oven for 20–25 minutes,
or until the cakes are well risen, golden and feel
spongy to the fingertips.
9. Allow the cakes to cool in tins for a few minutes, then
turn out onto cake racks and peel off lining paper.
10. Sandwich the cakes together with lemon curd.
BUTTER CREAM AND DRIZZLE
Beat 400g of softened butter and 1200g of
icing sugar together with an electric mixer until
light and fluffy.
Gently mix half a cup of icing sugar with Elderflower
Cordial until a dripping consistency. Drizzle over cake
after you have iced with butter cream.
